Hah, my wife and I have discussed this exact thing before, and we both agree, we would have him eating all manner of disgusting stuff and pretend it’s cultural cuisine.
Although I think people actually do eat possum around here, unsure about the pickled part. :P

The funny thing is most of the stuff he ate (Alligator, Nutria, Crayfish) are all normal down here. Boudan? Come on.. it is pork sausage with rice.. what's bizarre about that?

I LOVE Turducken.. we have two places here that make it (including one of the famous Hebert’s).. I don’t wait for Thanksgiving, I will roast one up a couple of times a year.

When I lived in Lafayette, actually it was Maurice but the hoi polloi of the area decided we needed to have a Lafayette address and they had it changed. Anyway I always stopped by Heberts for their deboned chicken stuffed with all kinds of good things.
Gave a couple to my boss in Houston one year and I ended up receiving his special Christmas list for fresh Hebert's deboned and stuffed chicken and Turducken and making a special trip to Houston to deliver. He did not want them frozen!
