"Initially, their government bodies and major shopping complexes decided to start using the more politically-correct and all-encompassing 'Happy Holidays' or 'Seasons Greetings,' which I thought was fine."
That's what the hysterical propagandists say. The truth of the matter is that some businesses do and some don't. Government offices avoid legal confrontations involved with any hint of establishment of one branch from Judaism over another. It's been that way for a very long time. There were outcrys against "Xmas" (old reverence using the old Greek X) on store windows in the 1960s (and probably before).
The New Age left (mostly people descended from Christian families and on school boards, in city councils and the like) has managed to goad some big media Christians who view themselves as "traditional" into attacking Judaism with early 20th Century (and older) propaganda tactics.

Vegetarian pr**ks I've had it with you people!!! We're going to keep this party at the Grill House whether you like it or not, so you can sit quietly at the table furthest from the "grill of death," as you so quaintly put it, and you'll get your f***ing salad bar, including organic tomatoes. But you know, tomatoes have feelings, too. They scream when you slice them. I've heard them scream. I'm hearing them scream right NOW! I hope you all have a rotten holiday! Drive drunk and die, The B***h from HELL!!!!!!!!Grill of death - bwahaha!
