Beer Cheese Cornbread

Yield: 1 loaf

Ingredients:
1½ cups all purpose flour
½ cup Yellow Corn Meal
2 Tbsp. sugar
1½ tsp. baking powder
1 tsp. onion powder
¾ tsp. baking soda
½ tsp. salt
2 cups Cheddar Cheese, grated
1 cup Kalik beer, or your favorite beer
2 eggs
1/3 cup vegetable oil

Method:
Sift together the flour, corn meal, sugar, baking powder, onion powder and baking soda.

In a medium-sized mixing bowl with electric mixer, beat together the cheese, beer, eggs and oil. Add the dry ingredients and beat for about 2-minutes.

Turn into a greased loaf pan and bake at 350°F for about 1-hour or until a knife inserted in the centre comes out clean.

Serve warm or cold and refrigerate left-over cornbread.
