Goodness gracious, you must try a pickled egg. I take it that you do not live in the south. What the bartenders do is just drop boiled eggs in the gallon jar after all the pickled bologne has been eaten.
But, me, I have a more refined and tasty recipe for them, as I am not a lazy bartender.
And in cajun country, they serve pickled quails eggs. Some people, yankees usually, swear that they look like eyeballs.

Grew up in Idaho, live in California, in the SF Bay area. I'll have to try a pickled egg. I'm going to pickle some of my garden produce, so no reason why I can't pickle an egg.

I guess I can pickle some eggs, along with the peppers, eh? I've got wax peppers growing in the garden, and thought I'd try to pickle them. I've never produced a pickled anything before, so this will be a little experiment. I am nothing if not adventurous.
