If I change the properties in Outlook so that my new server is chosen to retrieve my mail, will I need to do anything? will my address book be intact and simply attach to the new service?

I believe that is correct - it's been over three years since I made the dialup go away, but my recollection is that I simply entered the new ISP information and went on - the pain in the ass was the time required to notify everyone about the addy change.
