I love ground lamb...we only get it occasionally in the supermarket, so when we do, I buy lots of it, and freeze it...its really yummy...

That way of making meatballs, looks especially good...I will have to try it...Ii just love Ricotta cheese, so I imagine adding it to the lamb, beef, and pork mixture, along with the Parmesan, makes for some tasty meatballs...I am going to do that, the next time I make meatballs...

One or two eggs, some bread crumbs and we like galic.. Fry them in olive oil and you'll love them... I use about a pound of each meat.. You can also use Veal instead of Pork.. but I love the flavor pork gives to sauce..

Oh.. and Mom.. if you use the wet Ricotta, drain it for awhile to get out the water. The last Ricotta I used was nice and thick with no water at all.. Wish I could remember the brand..
