Good article. I love reading stuff like this, since I'm in Florida. Guess what? My neighbor met Katherine Harris. She was at his church this past Sunday. He got to tell her how much he respected her actions during the election. He said he could tell she really appreciated hearing that.

Prayers being said for all of you. It really does seem like Freeper Hospital this week. I just got back from the emergency room. My little guy took a dive into the corner of the coffee table. Fortunately, it's just a couple of stitches in the eyebrow. It could have been so much worse.
Mental note: need new coffee table - preferably round.

I used to make Mesquite Jelly for sale. Ok. You will know the bulk cost of your flour, sugar, eggs, milk, spices etc. You will measure and price as you begin your adventure. 2 C flour= $.00, 1C sugar= $.00, and so on, plus your labor, then double it. You figure your "direct costs" only. Freight costs are NOT included in your direct costs. Sometimes it's cheaper to find a speciality baker for your needs, but that is something you will figure out for yourself.

Thanks, Till. That's basically what I'm doing. No overhead costs are being calculated yet. Although, I can do that all the way down to how many KWH of electricity I use to run the oven to make the cake.
I am a control freak about the quality of my ingredients. I have been known to make a loaf of home-made wheat bread just to use for fresh bread crumbs. It really does make a difference.
The hard part for me is actually sticking to measurements. I tend to cook by feel and taste. Measuring quantities is something that I am disiplining myself to.

Bev -- Do not be afraid. We are praying like mad. My dad had the same thing, and he had CHF, but it WAS the medications he was on...never bothered him again...

It has been quite a week for us. I was over at me Mum's today, and there's some more disturbing news comig out of the Catholic Church, this time it is in reference to the Jesuits.
aaaarrrrggggghhhh.... If it weren't for Deej's beautiful testimonial this morning I might think the world is coming to an end. (I guess the optimist in me would say, "At least the taxes will go down...)

I would measure until I had the cost of each and every item cooked. I taught our boys to cook. I used the hand method of cooking too, until they made me realize....they were just learning, so I would put it in my hand, then in the measuring cup or spoon. I'm back to hand, and pour again. You sound more finicky about your recipes than I and around here I'm known as a nit-picker.
