Right on Jimbo!! Pot roast is a work of nature ;-)LOL

Palo, if you use a small piece of meat, you can do it on a stove top, just have it on medium heat, but in a sealed pot.You have to brown it first anyway, so you can leave it on stove top, but that doesn't get really even heat.You may have to cook longer, say 3 hrs, that way :-)

I love pot roast also... ...Really once you do all the prep work, cutting the veggies, and wrapping the roast up with the onio soup mix...once thats done, it just needs to roast in the oven, or in my case, I use a Nesco roaster...I love pot roast that roast along with onions, potatoes, carrots, and celery...and with that, tada, here comes story...

When I was working while in school, I was asked to work overtime...so I called my mom, and told her I would be two hours late coming home, just so she would not worry...

Now, I knew she would inform my brother, and dad of this, and they all knew to leave some of moms dinner for me, for when I got home...

I arrived home, very hungry, and went into the kitchen...found out we were having pot roast with all the fixings...well, the meat, carrots, potatoes, and celery were there, but NO nicely browned onions...moms onions that she cooked with the post roast were the best and delicious...pot roast without browned whole onions was not the same...

I screamed out loud "Who ate all the onions?" Well, poor dad, he knew he was the culprit, he ate every last onion...he looked to very sad, tho, to realize he had made me so unhappy...he asked mom, if couldnt she make some more...well, you just cannot whip up a long roasted brown onion, in a few minutes..So I had to have my pot roast with no onions, and boy was I mad....

Poor dad, he really did suffer for that...At our meals, Dad was always served first, then us kids, and then mom took hers...so the next time mom made pot roast, dad got his serving, and apparently did not take any of the browned onions...then us kids got our food, and mom got hers...after we had all served ourselves, Dad looked into the pot, to see if there were any onions left, and, there were of course, so he tapped me, and asked me if it was okay for him to take some onions...He did not forget how angry he had made his little girl, and it was really pitiful to hear him ask me, if he could have some onions...

He never,ever forgot the incident, nor lived it down with the rest of the family...a few weeks before he died, while I was caring for him, he looked at me, and sick as he was, grinned, and asked me, did I remember the time he ate all the onions, and how I screamed so...

I had not thought of that story in a long time, but talking about pot roast brought it back to me...what fun...
