I was thinking more along the lines of the anise sponge cookies that they sell in the supermarket. They look more like small slices of bread than a traditional cookie though.

Ah...OK. I don't think it would look like bread, though.

I'm still going with Springerle! If made with no real pattern on it, it would resemble hard tack (cram), but taste soooo much better! And travel really well...some recipes actually recommend that you "age" it for several weeks before Christmas, and it keeps well for a month at the least.
