I made those lemon cookies...man oh man! They turned out great. I altered the recipe a tad, though... Here's what I did.

Kim's Lemon Cookies

1C Butter, softened
1½C Sugar

Cream these together, then add,

2 eggs
1tsp vanilla
3tbsp reconstituted lemon juice

Mix together well.
In a separate bowl, mix together,

2½C Flour
2tsp Baking powder
¼tsp salt

Add a little at a time to butter mixture.
Chill slightly till a little firm, then roll into 1" balls and roll around in colored sugar if you want to.
Bake at 350° for 10 minutes or until very slightly brown.

I made a dozen cookies and then dropped the rest of the dough onto some plastic wrap and rolled it into a tube like the frozen cookies you buy in the store, and stuck them in the freezer. The idea is I'll be able to cut off the amount I want to use.

I'm thinking of adding more lemon, for a stronger lemon taste, using a coarse ground sugar to roll the cookies in, and adding a little yellow food coloring in the butter mixture, for fun!

Any questions?

Any questions?

Can I use a different flavor?

Yeah...can you overnight me a batch?

I seriously need to find Mom's lemon glaze cookies. They weren't the type to store well, but they never lasted long enough to need storing! Basically they were sort of soft, mildly lemon cookies that you then drizzled with a (very!) lemony glaze while they were still warm. Mmmm!
