In Bangkok, I saw our cook put an entire cow brain in a greased skillet. I got out of the kitchen in a hurry. I didn’t want to know what brains smell like when they’re being cooked.
The recipes in “Gourmet” required I believe three prewashings before cooking the brains. I figured it was a typo that should have read “before putting in garbage”.
