
MAPLE-GLAZED CINNAMON ROLLS / Holiday breakfast item
Ing 1/4 c br/sugar 2 tb ea maple syrup, butter, thin-sliced apple 12 oz tube cinnamon rolls
Line 8x8x2" pan w/ Reynolds Parchment, extend up sides; set aside. Pour combined br/sugar, maple syrup, melted butter into lined pan. Layer apple slices over; cinnamon rolls on top. Bake golden brown 350 deg 20-25 min. Let set 5 min. Invert onto platter. Remove parchment. Serve warm. Vary: Swap 1/2 c sweetened dried cranberries for apples.

My son, who loves to cook, bake, and “mix” ingredients, has teased me with his homemade cinnamon rolls/buns that he intends to make for us when he and his GF come for Christmas this year. He showed me a photo of his work a week ago. He is often experimenting in the kitchen (like his Mama).
If he was proud enough to show me a photo, then you KNOW it must’ve been amazing! Being in the kitchen is one of his MANY talents. Sometimes I can’t believe he is the same person who had stomach issues growing up. (We had to put him on a strict probiotic regimen in HS to correct all the antibiotics he had been prescribed early in his life. He was a sick kid. Not his fault, but he has triumphed over that. And look at him now! A miracle that he is so much better!)

NEW ENGLAND CRANBERRY PIE / tartly sweet
Ing: 1 c fresh cranberries 1 c golden raisins pre-soaked in juice or applejack 1/2 c cranberry juice, divided 1 c sugar (more or less to taste) pinch salt 2 tb cornstarch 1 tsp vanilla home-made pie crust
Method: Line 8-9" pie pan w/ pie crust. Cook cranberries, 1/4 c cranberry juice, raisins to a boil, reduce heat; simmer 10-15 min til cranberries start to burst. Stir in sugar/salt. Add combined 1/4 c cold juice/cornstarch. Cook/stir 4 min. Offheat add vanilla; pour into pie crust. Add top crust. Bake 350 deg 30 min. Serve pie warm w/ dollop of whipped cream or vanilla ice cream or both.
Chef says you can double filling. Eliminate top crust for Nantucket-style pie.
