Oh yeah, definitely. Here in The Boonies the first time I ever had lasagne it was made either with cottage cheese, or Farmer’s Cheese (which used to be sold in the stores, I’d not thought about that in a long while). I’ve had it made both ways and of course with ricotta.
Now the image of cottage cheese is living rennet-free in my head, mozzarellaing with my mind.
