Do you have a filet knife? That’s what I use. You don’t peel the mango and then slice it. You slice it first then use the filet knife to get that skin off.

Once I get the mango sectioned and cut into long chunks, I put those into a clean mason jar and cover with a tight lid. The lids I use now are plastic and perfect for this use. Feel free to add a squeeze of lemon juice if you aren’t going to use the mango slices right away.

Sugar is sugar. Natural sucrose/fructose/glucose/etc is the same thing as "artificial" sucrose/fructose/glucose/etc. It's all the other processed trap in most foods that'll get you!
