I would, but I don't like Key Lime pie. I make a wonderful NY Style cheesecake from scratch that requires cream cheese and sour cream, 6 egg yolks, sugar, flour, lemon juice, also beating the leftover 6 egg whites at the end until firm, then folding them into the batter before putting it in the prepared springform pan. You bake the cheesecake for an hour, then you have to turn the oven off, and leave it in the over for an hour, then cool it on a rack for another hour before putting it in the fridge overnight. The first time I ever made the recipe, and it was many years ago, I think it took me 3 hours to make the batter because I was so careful to follow the instructions to the T.
