I spent years in restaurants before immigration kicked in, from dishwasher to mgmt., and I thought I knew inspectors, but in later years as a service plumber seeing the kitchen areas of post immigration restaurants, I think food inspectors use a different standard, if any standard at all, with immigrant owned eateries, also fair hiring practices don’t seem to apply to them.

I have a friend that worked in a very reputable restaurant kitchen in the 80s and the went on to be a master plumber spending his share of time repairing plumbing in restaurant kitchens, many times during service hours.
He’s told me on many occasions, if I knew what goes on in restaurant kitchens I’d never eat out again.....which is why I like Carrabba’s....at least there you can watch the food being prepared if you want.
I occasionally scan the ratings for the local restaurants. Indian restaurants are usually near the bottom of the ratings, fast food franchise chains are usually near the top.
