There is an observatory at the South Pole. In 1994 when Shoemaker-Levi 9 hit Jupiter, that observatory was the only one to capture all of the impacts.

I don’t know if this can be corroborated online, but I heard it first hand from an astronomer from Yerkes Observatory who was staying at the South Pole at the time. His name was John Briggs.

The first impact at least hit on the “night side” of Jupiter and wasn’t visible from Earth. The Hubble was watching like a hawk, and the Galileo probe was orbiting Jupiter at the time.
