Don’t remember exactly, but I heard it has something to do with using leftovers and making dish out of them. It was someplace other than China.

San Francisco shortly after start of gold rush. 1852? Workers entered Chinese place. It was late. They were hungry and wanted food so the chef threw together leftovers, and voila, Chop Suey.
