Bbq bookmark for December
The only time I have ever stood in a Star Wars caliber blockbuster line for a restaurant was at Jack Stack BBQ, KC. It was very worth it!

I think the world should agree you don’t need, and shouldn’t be covering bbq in MSG. That’s what Scott does. So much so he calls MSG “Jesus’ Tears.”
Joe’s in KC. Q39 in KC should have been considered too.
Vinegary NC sauce.
Some years back while working in S Carolina I was invited to dinner where the restaurant served BBQ. Having my mouth set from birth on Texas BBQ, I nearly embarrassed myself by almost up-chucking my first taste of East coast BBQ, specifically the Carolinas. I was unprepared for the overpowering vinegar overtones in the sauce, the coleslaw, the potato salad, etc. Thank goodness the iced tea was about normal.
Contrast that with what passes for BBQ up in the Idaho region. The two times that I had their local BBQ it seemed to be a slice of roast with spicy tomato sauce poured over it - less than appealing.
Living and travelling in the South since 1986 has been a delight when sampling real BBQ smoked meats! A few months ago our local VFW had a BBQ cookoff fundraiser...got to sample and judge 15 different entries.
One guy from 3 hours away from the NEGA mountains asked me to try his pulled pork without sauce...he would provide sauce once I had tasted without (if I wanted to...) That was the most delicious pulled pork ever! He won 1st place.
The bad news...he does not have a restaurant, nor sell at all...strictly enters competitions. I’m still sad.

While traveling for work with a couple of other guys we were referred to #7 Big Bob’s by the people we were visiting there. After the “meal” we left with the idea that our local friends were either pulling a joke on us or that they really disliked us. It was an absolutely terrible dining experience!
I went to Interstellar BBQ in Austin, and agree with other reviews that it is a really special, competition level BBQ.
However, once standing in that line, to pay that much is enough.
I’ll try your recommendation when I am in San Antonio in late July.

...found it to be overpriced and ordinary. The brisket was dry and the rib was too much smoked fat before you found the meat. Don’t rec vs the other Austin favs... ymmv
Have you ever tried pecan wood? That’s all we use anymore. Subtle and goes with EVERYTHING.
