The first Filet-o-Fish sandwich was developed in Cincinnati in 1962 by a McDonald's franchisee whose store was located in a heavily Catholic neighborhood in that city. Ray Kroc, who acquired McDonald's in 1961, was a first generation Czech American and spread the Filet-o-Fish nationwide by 1965. I don't know if he was personally a Catholic but as most Czechs are Catholic, he would have been familiar with the no meat on Fridays practice.
