I think the guy wanted to punish Disney by trying to cause a death or serious illness of one or more patrons. People would sue, and fewer people would go the parks if they thought the foods were poisoned or otherwise not what they said they were. Really very reckless behavior, potentially harming innocent people who have nothing to do with his dispute just to spite Disney. Though he was a “professional menu writer” - probably a very unfulfilling job for a very unhappy person. He obviously got fired over some dispute maybe stemming from lingering resentments. Stuck behind a computer screen typing in the ingredients of every dish in the park? Crappy job. I do wonder how they season those Epcot turkey legs, though.
