The context in Romans 14 is fast days.....not the moral law of the ten commandments and the holy weekly Sabbath God sanctified at creation....thousands of years before any Jew was around.
That’s why evangelicals don’t even keep Sunday anymore as the Lord’s “day.” Its more like the Lord’s hour and then off to the races. At least evangelicals used to keep Sunday as the Sabbath day.....the whole day.

God's commands are based on Him being our designer. It all works better when we follow His instructions. Thinking we are "free" from the law as a justification for doing what we prefer is a very dangerous rationalization. Christ died for us on that cross to free us from the burden of sin we are aware of because of the law.
