Dad was a country preacher, and church members who were farmers would leave fruits and veggies at the back door for us. If we kids saw eggplant before our parents did, we’d throw it into the creek. Gross.

I ***love*** grilled eggplant. Slice it super-thin, give it a dash of olive oil, and grill it. Amazing.
