I’ve checked out a few “buy from the farmer directly” and can’t seem to find one that doesn’t require monthly purchases and as a one-person household, I can’t eat all the beef they want to supply nor have the capacity to freeze it. Would like to find a cattle rancher where I can buy a few pounds of beef when I need it.

I’d check and see if there is a local 4H county fair and get to know some of the families.

Try finding one of more neighbors that could go in one 1/2, 1/4, 1/8 etc… with you. Very few ranchers/cow raisers proper are going to do small lots of packaged (unless you stumble across a weird Hannibal Lector type that surgically removes orders from them 🤣).

Look around your town for the nearest restaurant supply house. They stock whole meat cuts, ie, beef rib loin, whole sirloin, whole round, whole brisket,etc. Same thing with pork loin and bacon. Then you can buy in 15/20/25 pound chunks and cut it up to suit your needs.

I’ve been buying from my local one for 4 decades or so since the grocery butchers started sliding gradually and the group isn’t big enough to eat a whole cow at a time.

About half of my extended family are big time ranchers and occasionally want me to come kill for them but they run big crews that can eat a cow in a few months. I just bring home a steak when I do that.
