Once they had access to the servers, they have access. The servers could be in Bezos basement. they can copy what they need. and make sure they bit locker everything so it can’t be tampered with. The GL accounts and check registers would be something to copy and maybe even put into a database so that they can analyze. Like cross reference names and addresses.
No need to carry out the equipment. They just make mirror copies of the entire hard drive with all files.
The copy can even be certified and used as evidence in court.
They are past the time period to destroy data. I’m sure they have backups to the backups off site by now.
