I know huff post, but when I was a kid, there were always gingerbread men on the table, and I would spit out the raisins, one aunt made them with chocolate chips.

Simple is often better, when it comes to Christmas Cookies.
That means something like Sugar or Shortbread Cookies, lightly sprinkled with that special sparkly, colored sugar.
You can use Vanilla, lemon or almond extract and/or cinnamon.
You can use food coloring just for kicks.
You can use a basic round cookie shape, or get creative with cookie cutting tools.
Pros: Pleasant flavor and aroma, small snack size.
Cons: The colored sugar ALWAYS falls off, onto the nibblers’ garments. Use egg to help prevent cookie from crumbling.

Oh, I don’t mean those Dansk things in a can. Proper Danish cookie is thin. Shape with the base of a glass wrapped in linen. Slightly brown edges when done

Snowball Cookies, aka, Mexican Wedding Cookies, Russian Tea Cakes. A butter cookie shaped into a ball, either flavored with vanilla or almond extract, and then coated in powdered sugar after baking. Can be plain or with chopped pecans added to the dough.
Spritz is similar and a close second.
