Today, I’m making a pork roast with sauerkraut, a favorite from the Ohio/Pennsylvania midwest area. A new twist - to brown the roast without making a mess in the kitchen, I’m going to use the grill to heat my large cast iron skillet, and do it outside. Then bring it in and put the browned roast on the bed of sauerkraut with appropriate other ingredients and seasoning.
