I think everything we ingest has to be managed. Growing up we ate more fresh foods and meats than processed foods. Grandparents were farmers. Today, what we ate normally back in the 60s and 70s costs more because it is “healthy” or “organic.” I know what we ate back then was organic, as a teenager I had to run the manure spreader. 😀 Too much of what we eat is processed food and bad for us. Why do poor communities have problems with diabetes, renal failure, over weight and heart disease. Look at what they have in their cart at a grocery store. Soda, chips and ice cream were treats, now they are regular parts of meals.

After decades of eating and drinking processed foods people run from one quick fix to another. Some people have no alternative because of health issues from birth or genetic, but I am concerned about people grasping the newest and greatest weight loss drug. Even if it works, it is still a drug and long term effects are unknown in many cases. Same applies to all the “natural substances” people glom on to. If the food you eat is not processed food, you should be getting what you are looking for in your regular meals. Too much of anything can be harmful.

You are exactly right.

If you can point to 3 major change in the American diet, it was the introduction of seed oil, genetically altered wheat and addition of sugar to just about everything.

Now we hear that oxalates are in issue also, however oxalate poisoning has been known for years. Kids would get dizzy eating rhubarb tarts.
