I went round and round with the election officials in North Carolina about this. Bottom line, there is no way to know, for certain, that my vote was actually counted towards the vote tallies of those I voted for. This is the final email I received from them:
Good Morning,
One of the foundations of United States voting is the “secret ballot.” It is prohibited by law to make records of how an individual voter marked their ballot, therefore, there is no report I could provide to you to show you how you voted your ballot.
You can review that your vote was processed by searching your name at this link: Voter Search

Weird because an election worker came around to our house and said he knew we had voted republican in the previous election- how would he know that we, and others in town voted republican? He let it slip
