That advice isn’t just for movie stars and pro athletes.....the restaurant business is terribly competitive and has an astronomically high failure rate.

High failure rate:

Taste fatigue...people get tired of the same old, same old.
Deficient market analysis. Variable prep of the food, so no consistency in flavor. Bad point of service. Unclean premises. Lousy taste. Owners and manager who know very little about laws and health standards. Don’t know how to keep books.
Best restaurants have a consistent ,delicious, product and keep prices at low end of spectrum. follow health laws and give good value for price.
