People talk about authentic Korean cooking, authentic Chicago tavern style pizza. Authentic Mexican. I’ve observed there are half dozen different ideas on what is “authentic “
I don’t mess with that stuff
Bottom line - Either I like something or don’t
Do not claims that my mexi food is authentic at all but we like it
I did rice, refried beans from can, and a roll up similar to enchiladas + burrito
Rice - brown in rice maker with cumin, thyme, garlic, sea salt, turmeric, paprika.
When done mixed it with salsa, red mild enchilada sauce(El Paso), shredded cheese. Fine chop sauteed onions, mixed color pepper.
Beans (El Paso) open can😊
I’ve always tried to buy Hoya for their America support but our local nearest store only has a few of their products
Mexi roll . Used 8” Flour tortillas. filling 1/4 pound 93% ground beef sauteed with minced onions, mixed color pepper, garlic. Add Some of rice, some of beans, salsa, shredded cheese ( note: same ingred in both rice n filling)
We don’t like HOT so it’s mild ingredients
For cheese I used fresh grated sharp cheddar and Kraft shredded melty mozzarella
On tortilla put a spread of half sour cream & half salsa that I’ve previously mixed in bowl.. Not much 1-2 Tablespoons - just thin layer and it will go underneath the meat mixture. This is for Three rolls so divide mixture into thirds and pot atop cream layer. Add 1-2 Tbls cheese. Roll up snuggly.
I did three like this for son and three for me with soy crumbles -but have used lentils.
Prepare pan. 9 X 13 . Spray w/Pam. Put thin layer of salsa combined with enchilada sauce. Put in 6 rolls seam side down
Top with enchilada sauce and shredded sharp cheddar cheese. Amount your choice if you like dry or saucy. Cheesy or just touch of cheese. We go heavy on both. I put sliced black olives on mine to differentiate
Bake 350 10 -12min. Longer if prepped day prior n refrigerated.
Serve with add on offerings: shred cheddar cheese, salsa, sour cream, red enchilada sauce, heated cheese sauce
Son ate all three. I ate one and made two leftover plates with beans & rice. I thought it would be same for Jeff but he really likes this meal. He doesn’t do beans
This is a no measure recipe. Go heavy on what you like n omit what you don’t like and add your favorite things - cilantro, hot peppers, avocado slices,
