I used to go in the back section of the Fry's (Kroger) bakery. They had a nice chart of what can be done with expired food. A lot of it will go to livestock.
A day old bread store had whole carts of bread labeled for agriculture only. I imagine that if a human tyrned it into stuffing or chicken coating it wouldn't be the end of the world.

If it is good for the pig you’ll soon be eating, then skip the middle pig and feed it straight to the human.
