Hate to burst your bubble, but all virtually all wired phone calls pass through the same Internet you think you are avoiding.

NSA has everything, and have had it for decades. Once the data centers are built up for AI, they'll be able to analyze and act on it. The sheer volume has been our main protection.

I know there are laws protecting the wired landline versus the wireless. The government and its associates get around them but having the internet on a landline with good security measures one can prevent/minimize hacking, ransomware and spying, whereas wireless can be a gamble. I don’t use my smartphone to surf the internet or make financial transactions either and prefer to mail monthly payments as much as possible.

That is correct. There is NO DIFFERENCE between cell and wired telephone service with the exception of the 'last mile'. ALL phone traffic is digitized, again with the exception of the 'last mile'.

Voice telephone, aka Plain Old Telephone Service (POTS), uses such a low data rate that it is broken up into digital packets and stuffed into the data 'holes' in other internet traffic.
