Pizzas weren’t sliced as they are here in wedge shapes. They were cut in rectangular blocks.

The pan and stuffed pizzas in Chicago are generally cut into wedges. The midwestern square cut is most common with thin pizza that has a rigid, cardboard texture. On pizzas with a more delicate crust, the non edge pieces would be impossible to pick up neatly.
