I worked in a packing plant known for butchering bulls for hamburger and they’d pack the bull fries in 25 lb boxes. We had a huge walk in freezer full of several thousand pounds that some Polish outfit in Chicago bought for their beer festival. They were thrilled that they were able to purchase so many. Never had them ain’t about to start.

When I worked on the family farm at about the age of 17, I recall when we would turn our young bulls into steers. The young bull would come down the wooden cattle chute and a couple of vertical posts would be brought together behind his jaws to keep him in place. At that point, one person holding a very large, wicked looking Case knife would give it a swing, while another person standing by would inject a cow-sized dose of antibiotic just as the newly-minted steer was released to continue down the chute to a holding pen.

The whole time some little kids that lived nearby would be squatted beside the cattle chute with a shoe box where they deposited all the fresh "mountain oysters" to take home for frying.
