Try making real TexMex queso without processed cheese... ask Chipotle why it can’t be done...
It is possible to make K-So with cheddar but it is a bit of work. Start by making a Blonde Roux with flour, butter and milk or cream and then add shredded cheddar and a dash of salt. Then add the Peppers of your choice. If you want to go whole hog toss in some diced Roma tomatoes, onion, garlic, jalapeƱo, Cilantro or use those ingredients to make pico de gallo and serve it as a side dish.
I prefer to make Interior Mexican Queso with white Goat cheese or Velveeta Blanco, sweet onion, Roma tomatoes, garlic, roasted peeled and seeded Pablano peppers served with warm corn tortillas. If it’s just Me eating it I toss in a few Chilies Pequin for some zing.
