I remember one year when I went back home for Easter when I was in college. I was bringing my boyfriend home (now husband). My parents were thrilled, and Dad wanted to provide a lavish dinner. Only thing was it was Good Friday that night when we arrived. He decided to serve lobster tail, and I told him that was not the point of eating no meat. Still, we enjoyed what he had settled on. It felt sinful because it was so decadent on such a somber day. However, Dad was rejoicing that we were there with the family that Easter. I don’t remember what we had for Easter dinner, but it was likely a beautiful roast of some sort or maybe turkey. Such was his joy that year!
