I like hamburgers well done, too. They taste like they aren’t going to have me sitting on the toilet while heaving my guts out. But, to each their own, so if you want it, have it, although I cannot blame the restaurant for protecting itself.

Just imagine how many scumbags sued Hilton with phony claims to force them to produce this form.

Same shit with phony ADA claims...one guy made millions suing California small businesses when their bathroom mirrors were not at the "correct" height for people in wheelchairs.

What do they have you sign if you order the steak tartare? Are Lebanese restaurants liable for the kibbe nayyeh? Fugu sashimi, anyone? Caveat Emptor should apply in all such cases.

PS: I've eaten and enjoyed all three. Never a problem (so far).

I know a guy who used to eat raw hamburger out of the package. He never got sick. Most food illnesses is from bad handling. I always eat a properly cooked medium rare burger. Anything else is essentially raw. I appreciate places that will still not get retarded over cooking the burger to my temperature.

I always get steak medium rare, anything else is burnt.

I would just sign as Inigo Montoya on the form though.

Cooking will not sterilize prion diseases. Prions are some of the hardiest pathogens around.

Messes up your hamburger meat, however.

I also use that phrase regularly, to good effect. A few others I've used:

I haven't been asked to sign a waiver, but on occasion the chef will come out of the kitchen and give me the hairy eyeball and ask "Are you sure?"

Haven't ever had a bad burger or steak yet using the above. OTOH, I've been cursed with some horrendously overcooked items over the years when I've forgotten to specify. "Rare, please." "Are you sure, sir?" "Yes, but if you can't serve it rare, I'll settle for raw and a Zippo."

NO ONE believed in overcooking hamburger prior to 2010. Then the government decided “safety” required all hamburgers to be cooked to 160 degrees plus - a temp that destroys the bacteria within 10 seconds.

I ate thousands of hamburgers and never burnt them like that. My Dad would have died of shame. Never got sick eating a hamburger either. From bad seafood in restaurants? Yes. Hamburgers? Never.

Best temp IMHO for a burger is no more than 125. 160 is charcoal.

Exactly so. I have not tried fugu, but I eat sashimi salmon weekly (and occasionally ahi) and have never had an issue. Our local Wegman's market (Upstate NY) has a great sushi counter that I trust. The salmon claims to be from New Zealand and arrives frozen; it's usually good for at least two days after thawing. One time I inadvertently let a serving sit in the fridge for three days and it smelled unholy so I tossed it, but that was entirely my own fault.

Baked salmon is good, grilled salmon is sublime, but raw salmon with real wasabi and a touch of soy is the best.

A medium burger or steak taste wise is great.
BUT....when i see that pink i think RAW.
Grosses me out.
I always order well done..
