If the door is 49” a 48” track would likely not work. In which case I’d go with a 60” track and cut it down to 49”.

That's what I was thinking myself. I am looking at the sizes of bifold track that HD sells. I see that they sell a 60" bifold door track for 4 doors. Where would you cut it down so that you don't eliminate any essential holes or stuff?

Cutting the door down is generally not a good idea, because modern doors are usually hollow core, and you can lose the stability of the edges.
