There are hundreds of versions of it, depending on mostly on the meat used. A common one is ground pork gravy over chopped onions, cheese curds and fries.
Pulled-pork poutine is excellent.
Went up to Quebec City to some restaurant, they served me something with french fries on a plate of gravy, which was about the most delicious thing I ever tasted. I think it was poutine. I licked the plate clean.
