“It’s been about 10 years since I canned chicken. I partially cooked it and cut it into cubes (chicken breast) adding a bit of broth to it. It turned out pretty good. I mostly used it for quick pots of soup or mixing in with the noodle/rice packages for dinner.”

Did the canned chicken end up shreddy? Even with my not pre-cooking it, my chicken breasts end up mostly shredded. Especially if I end up moving it around too much and whatever dish it ends up in.

Met mom, you said you didn’t like the results when Raw packing. I might be thinking this wrong, I thought with less cooking it might end up more like normal cubed chicken. How did it end up when you partially cooked?

Some of my chicken looks good as is but I think some of it did end up shreddy.

What I didn’t like about the raw pack, which I did with beef, was that it ended up with a partially filled jar and the contents were all compacted into a gelatinous mass in the bottom. I didn’t put much, if any extra water in because when the meat cooks down, it releases water and I didn’t want the jars overflowing. I think if the liquid came out of the jar it would ruin the seal.

So I figured that not adding water would be best. Plus I did try looking up how much water could be added to raw pack but could not find anything anywhere to give me an idea so I could end up with a jar reasonably full of broth but not overflowing.

The chicken I canned didn’t shred with use. I boiled the breasts partially, then cubed it. I remember someone (maybe DelaWhere) mentioning it came out better cubed.

I found a few jars that we hadn’t used, that I opened and dumped today. Canned in 2012. A few jars looked nasty inside, but several jars still looked and smelled fine. Still in the little cubes. I just didn’t want to attempt to use them after this long or put out with scraps. Went into the trashcan.
