Just make Your own. Cut blocks of ice cream (You can even get fancy and use some Flavored ice cream: Butter Pecan, Chocolate, Neapolitan, Mint Chocolate Chip or even some Orange Sherbet. (Orange and Chocolate pair very well together if You've never tried it.) place on a parchment paper lined cookie sheet and put them on it. Stand them on edge to minimize contact with the pan and get them back in the Deep Freezer for a least an hour. Meanwhile get some Ganache ready.
(You can use 9 ounces of bittersweet chocolate chips if you'd like.)
Now it's time to figure out the best way to get the Ganache coating on the Ice Cream Bars. I would start with the sheet pan still lined with parchment paper and then put a rectangular wire cookie/cake cooling rack on top of it. Try pouring it over the top and see how much trouble it is to get all the sides covered. The excess Ganache can be cooled on the parchment paper and then you can pop it off there and put it back into the warm Ganache bowl. If that doesn't work well then try stabbing the Bar with a Chopstick, wooden skewer, Popsicle stick or maybe a COLD Metal Fork or Knife. Then dip it into the Ganache and put the coated bar back on the cold sheet pan. Dip/coat the rest of Your Bars as quickly as possible and get them back in the freezer to set the Ganache. You might have to do a final coating on the location that was in contact with the sheet pan. Wrap Your Bars in Foil/Wax Paper/Parchment Paper or Plastic Wrap, whatever works for You.
Now sit back and relax.
