According to several sites, including this one that puts forth what one might surmise from the lyrics ( http://www.songfacts.com/facts/don-mclean/american-pie ), the jester might be Bob Dylan.

According to http://americansongwriter.com/bob-dylan-jester-american-pie-don-mclean/ , McLean didn’t like Dylan’s music or that he took the “thorny crown” from the king, Elvis Presley, when Dylan’s style replaced Presley’s.
