LAKEWOOD, Ohio – National Detroit-Style Pizza Day is recognized every year on June 23. To celebrate, we chatted with Joe Schlott, the owner of Gray House Pizza, to find out what first attracted him to Detroit-style pizza, and why he is one of the very few shops in Northeast Ohio that serves it, let alone specializes in it.
Schlott fancies himself as a “student of pizza” and is quick to admit that when he travels – especially to New York City, where pizza is king – his “first stop is pizza.”

900 degrees — you’ve got a pretty special oven
Detroit style pizza is actually from Hamtramck. I became aware of these restaurants in the “70’s because they sponsored softball teams at Jayne Field. The Lutomski League was very competetive producing world champion class B teams. Pizza and beer after the games!

CT pizza is good. I know, grew up there.
Been out 30+ years, CT has earned it’s reputation as the F you state.
FROM HUMBLE BEGINNINGS
In 1965, a time when most women couldn’t even apply for a bank card without their husband’s signature, our founder Ruth Fertel risked it all and mortgaged her home to buy a small steak house in New Orleans.
As a single mom with two boys, Ruth taught herself the restaurant business, endured countless challenges and, in the process, redefined hospitality.
When a kitchen fire destroyed Chris Steak House in 1976, Ruth was forced to relocate her business, but the Chris Steak House name wasn’t allowed to come along.
Short on time, Ruth improvised, adding her own name to the sign. That made it “Ruth’s Chris Steak House” and our legendary name was born.
I moved here FROM Florida ( well with an armpit stop in DC for a decade) and you are correct on both counts.
Just kneded the dough, it’s rising, My Bride will be creating ours a little later!
But NO cucumbers!
Ruth made it work and did it her way. I used to hear both Rush and Sean Hannity raving about the steaks years back, when good talk shows were easy to find on the radio. Ruth died in 2002. Just looking at her photo, I get the idea that she had a dynamic personality and was a People Person, which is always ideal in the service industry.

In the Ooni photo below, their temperature gauge shows 950F!
Our kitchen range gets up to 550F which does a pretty good job if you put a "steel" under the pizza.
Way back in the early 80s, I offered a Detroit style pizza at my pizza place. Bought special pans just for that. Sold okay, but hardly anyone went for the cucumber toppings.
You guys should come out to coastal NE North Carolina. I have been here a year and a half and have not found one edible pizza.
