Cultivating large batches of yeast is accomplished with each batch consuming 5 tons of highly oxygenated molasses in large agitation tanks. One tenth of a gram becomes two tons of yeast in four days. It then needs to be de-wetted, dried down to 7% moisture, and pressed into bricks, within 24 hours or it spoils.

Very cool process. It's all about giving the yeast enough food, oxygen, Ph, and perfect temperature. The strains are proprietary and guarded like gold in a vault.
