Link to the no-knead bread method. He uses Morton salt and regular white flour, and weird non-stick spray. I use Himalayan salt and organic flour, and parchment paper to avoid sticking.
This is a no-fail recipe and absolutely no kneading. Now he has many videos so it was hard to find the original simple one, this is the closest I could find. I never used the covered method.

I have baked a similar bread covered for years. Got a large spice container at Costco of everything bagel seasonings in a shaker container. Before putting the bread in the oven I lightly baste the loaf with about a tablespoon of water and then sprinkle on the toppings. Excellent! Many places sell this as I just took a look on Google.
