So is any whole wheat flour suitable for consumption?

King Arthur organic flour is not as finely milled as other flours. I think is has more elasticity than it's advertised gluten levels. Whole wheat flour isn't milled as finely as white flour. Most "whole wheat" bread recipes have BOTH flours in it. If you make bread with just whole wheat flour it tends to be denser and not as "fluffy" as white bread.
