There is a BIG difference between sharpening and steeling/ honing.

Sharpening produces the fine cutting edge. With normal use the fine edge can become folded over to one side or the other making it appear that knife is dull. Honing fixes this. Eventually the edge will become so broad that it requires sharpening and the cycle repeats.

The steel will take of the fold for a minute. I wish I knew a good knife grinder that would do pickup and delivery. I really suck at large knives on a stone.
