USA got a lot of people who were up and comers. Those who were unwilling to take chances stayed in Europe.

The vast majority of people in Europe from 1800 to 1900 were poor. Very poor. Those that came to the United States did extremely well, compared to the average European.

The standard of living in the United States today, is still much greater than European standards of living.

Food in Europe costs about 3-4 times the percentage of income it costs in the United States.
