Sugar is sugar. It’s called either fructose or sucrose. (C6H12O6)

I suspect the difference is between liquid high fructose corn syrup and granulated sugar (sucrose)

Or Glucose, or Lactose, etc... they may be sugars, but there is a plethora of chemical and reactiveness differences.
